There’s a floating taco and cocktail boat in the Caribbean and we are all for it

JOHN, USVI — Tacos and cocktails can be found in just about every dive bar on the planet. But tacos and cocktails while floating in the Caribbean Sea? Now that’s somethin’ to talk about.

Lime Out, a newly opened eatery in St. John, off the coast of the U.S. Virgin Islands, is drawing comparisons to ‘heaven on earth’ for its revolutionary new idea – a solar-powered gourmet taco-and-cocktail boat.

That’s right, you can now float in the ocean while sipping on cocktails and wolfing down delicious tacos filled with citrus-marinated ceviche and green curry chicken.

Genius!

The delectable food at Lime Out, which also includes the deliciously sounding ‘rum ribs’, is served to guests boatside, at a water-level bar complete with bar stools submerged in the water. Guests can either swim up to the eatery or pull up next to it on a boat, thanks to the fact that one side of Lime Out is designed specifically for grab-and-go boat traffic.

And if that weren’t cool enough, the entire operation is sustainable, with a solar-powered kitchen and recyclable or biodegradable materials, including cups, menus and packaging (there are no straws in sight here!).

We’ll certainly drink to that!
